A simple pasta midweek dinner
Served with a tricolore salad and Tesco’s Sun-blushed tomato garlic bread.
Tricolore Salad is traditionally tomato, mozzarella and basil salad as the red tomato, white mozzarella and green of the basil represent the Italian flag, also known as the Tricolore. Although, as most recipes “online” suggest avocado rather than basil, I shall be clarifying this with my Italian boss on Monday.
The key ingredients to good italian food is quality ingredients and simplicity. It’s the touch of salt that makes a fresh tomato sing, the drizzle of cold-pressed olive oil or shaving of parmesan.
