Countdown to Chrimbo!

In three weeks time the leftover turkey should be nearly finished and it will be time to reflect on the year past, while setting goals for the New Year.

In the run up to Christmas it is a tradition of mine to visit Borough Market in London Bridge for all sorts of deliciousness! This year I was able to go a little earlier than usual (I was there Thursday) as I we’re away for the main event so I was merely visiting to keep the relatively new tradition alive!

I was out of truffle oil, an essential addition to my mushroom risotto, and that is always a Borough market buy.  The same stall was offering a truffle honey that I decided to treat us to for the Camembert I was planning to bake today.

If you haven’t had a chance to visit Borough Market then you’ve missed out on a foodie’s dream and it’s my pleasure to share a few pics.


Baked Camembert with garlic, thyme and truffle honey.

This is a favourite of mine & Mr S and the truffle honey was an amazing add – so glad I decided to give it a go.

It’s a really simple dish; take one whole Camembert (250g) for two as a main course with a baguette.

Take the cheese out of it’s wrapping and line the box with baking paper. Return the cheese to the box.  Crisscross the top and stud the joints with slithers of garlic. Sprinkle with thyme and drizzle a good teaspoon of honey over the top.

Put in a preheated oven (180 C/ 160 C fan) for 15 to 20 minutes then enjoy dipping chunks of french stick into hot gooey loveliness.
